This juice is not really plain juice. The juice of the elderberry is not used for enjoyment and refreshment, but because of the health benefits.

Some types of elderberries are poisonous fruit, if used in fresh condition. In the world there have been recorded some rare cases of poisoning juice from fresh elderberries. Therefore, the berries are cooked and thus, the syrup is obtained.
If the juice is used in such a way then it is safe to use it. It is believed that only Sambucus nigra can be used fresh, but it is recommended that the elderberries to be cooked just a little, for digestibility and to improve the taste. When it is cold and flu season, this product is especially good.
Homemade elderberry syrup:
– 3 cups ripe elderberries
– 4 cups water
– 1 teaspoon cinnamon powder
– 1 teaspoon clove powder
– 2 teaspoons fresh grated ginger root
– 1 cup honey
In a saucepan pour the elderberries, water, cinnamon, cloves and ginger, and then put them on heat. When it boils, reduce the heat and cover it. Allow it to cook gently until an hour. The liquid should be boiled in half an hour.
Elderberries purify the body and increase immunity
Remove it from the heat, and when it partly cools, pour it through a strainer, into a bowl. When it’s a little cool, or lukewarm, add a cup of honey and mix everything well. Then the syrup is poured into the prepared jar or you can use a funnel and put it in the appropriate bottle. It is kept in the fridge.
2 tablespoons should be taken for adults and one for children per day, to strengthen the immunity. In the case of flu, you can consume more. It can be taken in a glass of water or fruit juice.
Homemade elderberry juice
– 2.5 kg of ripe elderberries
– ½ l water
– 500 grams of sugar
– 1 grated lemon peel
The berries are placed in the appropriate pot with half a liter of water and you need to cook for a while, so that they soften a little.
Then mash the berries, add sugar and grated lemon peel. Cook so that it unites. The total cooking is no more than 1 h. Strain through a dense strainer.
